Marinate chicken with all marinade ingredients + half the fried onions, half the herbs, and 2 Tbsp ghee. Rest minimum 2 hours, ideally overnight.

Fry sliced onions in oil over medium-low until deep amber, 15 min. Drain on paper towels — they crisp as they cool.

Soaked basmati: bring a large pot of water + 2 Tbsp salt + whole spices to a rolling boil. Add rice. Cook 4 min — rice should be 70% done (firm with white center). Drain immediately.

In Dutch oven, layer: marinated chicken with all its yogurt, scrape evenly. Top with 70% cooked rice. Drizzle saffron milk in lines, scatter remaining fried onions and herbs, drizzle ghee and rosewater.
